Los Roast was founded to address the scarcity of New Mexico-grown chile in Portland, OR, initially operating on a seasonal basis. An early collaboration with Santa Fe Ole transformed our seasonal venture into a year-round enterprise by introducing shelf-stable products to regional retail outlets in 2014. This expansion provided fertile ground for continuous research and development in pepper processing techniques and equipment. Over the past ten years, we have meticulously cultivated the Los Roast brand and honed our expertise, setting the stage for the birth of Best in the West.


Originally established in 1984, Santa Fe Ole pioneered the packaging of roasted green chile in a glass jar. The brand boasts decades of experience, a treasure trove of recipes, and a loyal, longstanding fan base. Santa Fe Ole continues to lead in producing innovative and high-quality New Mexico chile products.

Our brands originated as distinct entities, united by a common vision of what makes New Mexico Chile great. With complimentary but separate skill sets, an equal passion for manufacturing, and a collective ambition to expand, our partnership has culminated in the creation of New Mexico’s premier 'farm-to-jar' processing facility.
